Érase una vez en… Hollywood, se centra en el panorama cambiante de Hollywood a finales de los años 60, cuando la industria empezaba a olvidarse de los pilares clásicos. La estrella de un western televisivo, Rick Dalton (DiCaprio), intenta amoldarse a estos cambios al mismo tiempo que su doble (Pitt).
